St Ubaldesca was venerated by the Order. She lived in the twelfth century and is usually represented with a book in one hand and a pitcher in the other to indicate her principal miracle, that of turning water into wine. She is in the dress of a Hospitaller nun, reflecting her work in the Order's infirmary in Pisa.
